The sauce for this fresh spring potato salad is inspired by zhoug, a spicy chili sauce from Yemen that goes with basically anything. Here, the serrano peppers add heat, but you can tame them by removing the seeds from as many peppers as you like. I like to leave three seedless and one seeded. Otherwise, none of the seasonings will help lighten potatoes, cucumbers, and peas. While cardamom may seem like an odd addition to potato salad, it is an essential element in zhoug and gives this salad a pleasant aroma.
