I shed 40 lbs after having my baby – ‘cowboy caviar’ is my go-to for weight loss, it’s so easy to make

After experiencing the weight gain that pregnancy brings, a mother of two was determined to shed the excess fat.
She swears by the simple “cowboy caviar” that helped her lose 40 pounds after giving birth.
Georgia resident mother Chrissy (@myromehome) reveals the vegetarian recipe she said will help you get back into pre-pregnancy shape.
“I mix up my ‘cowboy caviar’ every week,” she began clip.
While she said some might see it as a “silly old TikTok trend,” it’s been a versatile staple for her for a while.
“It’s my easiest serving of veggies and fiber each week and has contributed 100% to my 40-pound postpartum weight loss over the past 10 weeks.”


Losing 40 pounds in under three months is no easy feat, so Chrissy won’t be giving up this dish anytime soon.
“I’m not kidding when I say it goes with almost every meal (as long as we haven’t already eaten everything).
“Tonight it’s BBQ chicken + cowboy caviar quesadillas.”
The healthy mom added that she mainly eats it with eggs in the morning, but sometimes adds it to tuna salad, grilled chicken, tortillas or pasta.
As for the preparation, just start by dicing one red pepper, one yellow pepper and one orange pepper.
To the bowl with the other veggies, add 1/2 cup chopped red onion, 3 roma tomatoes, and 1 jalapeno pepper.
Then add your healthy fats and proteins: one avocado, 15 ounces canned black beans, and 15 ounces canned black-eyed peas.
For some carbs, add 11 ounces of canned corn.
Enhance flavor with 1/2 cup cilantro, 1/2 cup olive oil, 4/4 cup apple cider vinegar, 2 tablespoons chili powder, 1 teaspoon sugar, 3 tablespoons lime juice, and salt and pepper to taste.
