Spicy Watermelon and Tahini Salad With Pistachios and Mint Recipe

This salad adds spiciness to the lean, sweet watermelon. Sprinkle the melon with salt and sugar for 20 minutes to draw out excess liquid to enhance the flavor of the melon; it also seasons the melon blocks beyond their surface. And as a bonus, the salty-sweet liquid that comes out of them does the double duty of removing the raw astringency of the jalapeño peppers that have been soaked in them. If you want the sauce to be less spicy, remove the seeds from the peppers before putting the slices in the blender. Similarly, if you want the salad to be less spicy, leave out the remaining chili slices added last. If you want to use a mortar and pestle to make the sauce, grind the seasonings first, then mash the chili and garlic slices until smooth, before adding the rest of the ingredients.
